Ingredients
  • 20 oz of potatoes, any kind (equivalent of about 4 medium red potatoes), quartered, and peeled if desired
  • Milk (to texture desired)
  • ¼ c butter
  • 3 tbsp sour cream
  • ¼ c grated parmesan cheese
  • 1 tbsp chopped fresh chives or scallions
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • Salt and pepper to taste
  • 1 tbsp crumbled bacon (optional)
Steps
  1. Cover potatoes with water in a pot and boil for 20 minutes or until very tender. (Test with fork)
  2. Blend potatoes with all other ingredients using a potato ricer or electric mixer.
