Easy Swiss Chard Sauté with Quinoa, Capers and Olives
Ingredients
  • 1 cup cooked quinoa
  • 2 bunches Swiss chard about 3 cups when cooked
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons capers
  • 2 tablespoons sliced green olives
  • 8 garlic cloves minced
  • 3 tablespoons Italian parsley coarsely chopped
  • 2 tablespoons unsalted butter
  • 2 teaspoons lemon juice
  • ¼ teaspoon dried red pepper flakes
  • ¼ teaspoon kosher salt or to taste (⅛ teaspoon table salt)
  • ¼ teaspoon freshly ground pepper
