Brenda Gantt Carrot Cake
Ingredients
  • 3 cups flour
  • 1 Tbs. baking soda
  • 1 tsp salt
  • 1 Tbs. cinnamon
  • 1 ½ cups oil
  • 4 eggs
  • ¾ cup crushed pineapple, drained
  • 1 ⅓ cups grated carrots
  • 1 ½ cups chopped nuts
Steps
  1. Cake Batter
  2. Combine dry ingredients
  3. Add oil and eggs beating after each egg
  4. Add pineapple and blend
  5. Add carrots, mix
  6. Add nuts..blend well
  7. Divide into 3 greased and floured pans
  8. Bake 350° for 35 to 40 min
  9. Icing
  10. 8 oz cream cheese, softened
  11. 1 stick butter, softened
  12. 1 tsp. vanilla
  13. 2 ½ cups powdered sugar
  14. juice of ½ lemon
  15. chopped toasted nuts
  16. Mix all together...sprinkle toasted nuts between layers
