[WIP] Copycat gusto! chicken bowl (chile sesame bbq)

Ingredients
  • 2 to 2.5lbs boneless skinless chicken thigh
  • salt & pepper - it's definitely more than salt and pepper. Maybe soy marinade?
  • paprika?
  • garlic?
  • vegetable oil?

  • subheading: Korean chile bbq sauce:
  • Used PF Chang's Mongolian BBQ, not bad, but I think this would be better homemade

  • subheading: Salad:
  • 2 medium bunches radish, thinly sliced, a little thicker than paper thin (2 on mandolin)
  • 1.5 large Cucumber, cut into thin bite sized chunks (for a large cucumber, probably quartered, then sliced)
  • ½ bad matchstick carrots about ½ inch long (smaller than they come in the bag)
  • 2 to 3 Jalapeño, de-seeded and sliced into quarters

  • subheading: Sesame vinaigrette dressing??:
  • 6 tbs of sesame dressing from store

  • Didn't end up making my own for this, I don't think it's too necessary
  • 2 Tbsp orange juice, maybe up to 4 tbsp?
  • 2 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 Tbsp sesame oil
  • 2 Tbsp olive oil? Maybe more?
  • 1 Tbsp honey
  • 1 Tbsp grated fresh ginger
  • 1 teaspoon minced garlic

  • lettuce
  • rice (classically brown, but white works)
  • chopped cilantro

  2. Combine all ingredients into small contain and shake vigorously to combine. Or do it the real way and combine everything except the oils in a high powered blender. Slowly stream in the oil to emulsify.
