Lemon-Butter Snowbars
Ingredients
  • subheading: Crust:
  • 1⅓ cup flour
  • ½ cup butter, softened
  • ¼ cup sugar
  •  
  • subheading: Filling:
  • ¾ cup sugar
  • 2 eggs
  • 2 Tbsp. flour
  • ¼ tsp. baking powder
  • 3 Tbsp. lemon juice
Steps
  1. Heat oven to 350°.
  2. Combine all crust ingredients in small mixing bowl.
  3. Beat at low speed, scraping bowl often, until mix is crumbly; 2 to 3 minutes.
  4. Press on bottom of ungreased 8-inch square baking pan.
  5. Bake 15 to 20 minutes or until edges are lightly browned.
  6. For filling, combine all filling ingredients in small mixing bowl.
  7. Beat at low speed, scraping bowl often, until well mixed.
  8. Pour filling over hot crust.
  9. Continue baking for 18 to 20 minutes or until filling is set.
  10. Sprinkle with powdered sugar.
  11. Cool completely.
  12. Cut into bars and sprinkle again with powdered sugar.
