Greek Salad Pita Wraps with Feta Slaw
with Sweet Potato Fries
Ingredients
  • Reserved shredded roast, from Roasted Garlic and Beef Mushroom Roast recipe
  • 3 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 Tbsp Dijon mustard
  • 1 to 16-oz pkg tricolor coleslaw
  • ¾ cup crumbled feta cheese
  • 6 Pita bread rounds, halved
  • 3 Roma tomatoes, thinly sliced
  • 1 Bag frozen sweet potato fries
Steps
  1. Warm beef in microwave, if desired.
  2. Whisk together oil, lemon juice, and mustard in a large bowl. Add coleslaw and cheese; toss.
  3. Stuff beef and slaw in pita halves; top with tomatoes.

  5. 1 (20-oz) bag frozen sweet potato fries
  6. 2 Tbsp chopped fresh parsley

  8. Bake fries according to package directions. Sprinkle with parsley.
