An easy company worthy weeknight meal.

Ingredients
  • 1  1 to 1¼ lb. Pork Loin (the small packaged ones)
  • 2 T. Olive or Avocado Oil
  • ¼ t. sea salt
  • ¼ t. pepper
  • ½ c. chicken broth
  • 2 T. maple syrup
  • 1 T. dijon mustard
  • 1 t. dried thyme
  • 1 T. heavy cream or coconut milk
Steps
  1. Slice the pork loin into 1" thick slices and sprinkle with salt and pepper.
  2. In a small bowl combine the broth, maple syrup, mustard and thyme.
  3. In a large skillet, heat the oil over medium heat and add the pork slices. Brown both sides. Remove to a plate.
  4. Turn the heat to medium-low and pour in the broth mixture scraping up any browned bits. Add the cream, stir and return the pork slices to the pan. Cook until pork is tender, but cooked through, about 5 minutes depending on thickness and size of slices.
  5. Serve with the sauce spooned over the Pork slices.
