Ingredients
  • cooked rice
  • 2 stalks bok choy or celery, chopped
  • 2 chicken breasts, cooked and cut up
  • 4 small mushrooms, sliced
  • 2 carrots, chopped
  • 1 can chicken broth
  • 1 handful cashews
  • 1 can water chestnuts, drained
  • 1 can bean sprouts (or use fresh)
  • 1 handful fresh sugar snap pea pods
  • 1 T chopped parsley
  • 1 t chopped chives
  • soy sauce
Steps
  1. Saute veggies and add chicken.
  2. Add broth and bring to a boil.
  3. Thicken with cornstarch.
  4. Add soy sauce to taste.
  5. Add cashews and herbs.
  6. Serve over steamed rice.
