Crispy Baked Buttermilk-Brined Chicken
Ingredients
  • 1.5 cups buttermilk*
  • 3 medium garlic cloves, peeled and chopped
  • 1 small onion, diced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon each coarse kosher salt and pepper
  • 2 teaspoons paprika
  • 1 to 2 teaspoons hot sauce (Tabasco, Frank’s, etc.), to taste
  • 8 large boneless, skinless chicken thighs
  • 1 ½ to 2 cups Kellogg’s Corn Flake Crumbs or Panko (Japanese Breadcrumbs)
  • salt and pepper
  • 2 tablespoons melted butter
  • note: Transform regular milk into buttermilk by warming gently to room temperature (easiest in the microwave) then stirring in 1 teaspoon (5 mL) vinegar or lemon juice.
