Pearl Barley Soup with Leek and Potatoes
Ingredients
  • 2 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 medium carrots, roughly chopped
  • 1 medium leek, chopped or sliced
  • 2 celery stalks, chopped
  • 3.5 oz ( 100 g) pearl barley
  • 3 medium potatoes, peeled, chopped into 1-inch cubes
  • 2 large garlic cloves, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • ¼ teaspoon ( 0.25 teaspoon) dry chilli flakes
  • 5 cups ( 1.25 l) vegetable stock
  • 1 dry bay leaf
  • 3.5 oz ( 100 g) cavolo nero, (or another type of kale)
  • Salt and freshly ground black pepper to taste
