Roasted Squash Sandwich
Ingredients
  • 1 medium (2 to 3 pounds) butternut squash
  • 2 tablespoons plus 1 teaspoon extra-virgin olive oil, plus 1 teaspoon for the arugula
  • Leaves from 4 sprigs thyme
  • 4 cloves garlic, smashed
  • Salt
  • Freshly ground black pepper
  • 1 loaf (14 to 16 ounces) ciabatta bread
  • 2 tablespoons unsalted butter, at room temperature
  • 8 ounces baby arugula
  • 1 teaspoon freshly squeezed lemon juice
  • 1 cup ricotta cheese, preferably fresh
  • ½ cup apple butter
  • 4 Granny Smith apples, cored, halved and cut into ¼-inch slices
