SPOTTED DICK SUET PUDDING
Ingredients
  • 225g self raising flour
  • ½ tsp salt
  • 2 tbsp golden caster sugar
  • 125g shredded suet
  • 175g sultanas
  • 2 large eggs
  • About 150 mls milk
Steps
  1. Mix dry ingredients and sultanas. Beat eggs and milk together then add to the flour mixture and mix together. I needed to add a little more milk to give a 'dropping' consistency.
  2. Put the mixture in a greased pudding dish. I used a 1 litre one with a lid. I put foil over the top before putting the lid on.
  3. I put 750 ml of water in the instant pot and sat the pudding basin on a trivet. Cooked on manual high pressure for one hour with NPR
