  • 3 Asian shallots, peeled and finely chopped

  • 100 g water chestnuts, drained and chopped

  • 1 tablespoon soy sauce
  • 1⁄4 cup lime juice (2 limes)
  • 2 teaspoons palm sugar
  • 50 g snow peas, cut into julienne strips
  • 50 g carrots, cut into julienne strips
  • 1⁄2 cup mint leaves, shredded
  • 1 cup coriander leaves
  • 10 basil leaves, shredded
  • 1 cup bean shoots
  • sesame seeds, toasted
  • 8 to 10 crisp iceberg lettuce leaves (as whole as possible), washed
