Fully RAW VEGAN CARROT CAKE
Ingredients
  • Cake
  • 4 to 6 cups juiced carrot pulp( drink the juice)
  • 3 to 4 dried mulberries
  • 1 cup raisins
  • 2 cups pitted dates
  • Ginger slice or pinch
  • 1 Tbsp Cinnamon
  • Slice of vanilla Bean
  •  
  • Vanilla Bean Frosting
  • 3 to 4 cups soaked raw cashews
  • 3 to 4 cups raw young coconut water
  • 1.5 cups pitted dates
  • 2 Tblsfresh lemon juice
  • Sprinkle of cinnamon
  • Pinch of vanilla bean
  • 1 teaspoon of rose water
  • Toppings
  • Crushed Pastichos
  • Shredded coconut
Steps
  1. Process cake ingredients in food processor
  2. Process frosting ingredients in blender
  3. Make the cake
  4. Place toppings
