Keto Low Carb Custard Tarts
Ingredients

  • 60g almond ground
  • 15g coconut flour
  • 20g powdered sweetener
  • 2g baking powder
  • a dash of vanilla essence
  • 30g butter (I used salted kerrygold to give the flavour some layers)
  • 1 large egg
  • subheading: Filling:
  • 6 large egg yolks
  • 100g double cream
  • 250g almond/soya milk unsweetened
  • 70g powdered sweetener (I went for erythritol this time, with a couple drops of stevia to counter act the minty-feeling)
  • ½ teaspoon xanthan gum (I know it seems a lot, trust me, it will work)
  • a dash of vanilla essence
