Healthy Orange Chicken
Ingredients
  • 5 Chicken thighs or 2 chicken breasts
  • 2 eggs
  • 2 tsp of soy sauce
  • ⅛ cup of cornstarch
  • ½ a cup of flour - I used gluten free
  • Water as needed to achieve proper batter consistency
  • 2 cups of rice
  • 4 cups of water
  • subheading: Sauce:
  • 3 tbsp of orange juice
  • ¼ of honey
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 cloves of garlic grated
  • ginger grated to taste
  • 1 tbsp of orange zest
  • ½ tbsp of cornstarch mixed with ½ tbsp of water
