Michel Richards Laurences Ratatouille
Ingredients
  • 4 tbsp olive oil, plus more as needed
  • 1 large yellow onion, sliced into ½-in cubes
  • 2 medium to large zucchini, halved lengthwise and sliced into ½-in thick slices
  • 1 medium to large eggplant, peeled and sliced into ½-in cubes, no oil, do in non stick pan
  • 1 bell pepper, sliced into pieces 1-in long (any color is fine), roasted
  • 1 28-oz can diced tomatoes, drained (drink the tomato juice; it’s awesome)
  • OR 1 ½ lbs plum tomatoes
  • 1 to 3 cloves garlic, minced
  • Salt/ pepper
  • Red wine vinegar
