Discada ("meal in a disc")
The chorizo and bacon make this dish!
Ingredients
  • subheading: About:
  • 1 lb bacon, cut into small pieces
  • 1 lb chorizo sausage, bulk or links with casings removed
  • 1 to 2 lbs beef, pork, venison; cut into 1 inch cubes (or 1 quart canned venison)
  • 1 large onion, diced (not too fine)
  • 4 to 5 cloves crushed garlic
  • 2 to 4 potatoes, diced into small pieces to cook quickly (optional)
  • subheading: For serving:
  • Chopped Cilantro
  • Salsa or verde salsa
  • Sour Cream
  • Corn or flour tortillas
  • Corn chips
Steps
  1. In a large skillet, fry bacon until almost done.  Do not drain.
  2. Add chorizo and your choice of raw beef, pork or venison. Also add onion, garlic, and potato; cover.  Stir occasionally. Cook until meat and potatoes are done.  NOTE: If using canned meat, add after the chorizo is almost done.
  3. While the discada is cooking, heat a skillet over medium-low heat.  Heat tortillas, one at a time, on the hot skillet.  Place in a clean kitchen towel, folded over the tortillas, to keep them warm.
  4. Serve discada by scooping into a tortilla like a taco.  Top with cilantro, salsa, etc.  Enjoy!
