Anna Olsen's Blue Ribbon Apple Pie
Ingredients
  • subheading: Filling:
  • 6 cups (1.2 kg) peeled and sliced mixed apples, (Mutsu, Granny Smith, Royal Gala, Honey Crisp, Cortland) - about 5 medium apples
  • 1 tbsp (15 ml) fresh lemon juice
  • 1⁄2 cup (100 g) granulated sugar
  • 1⁄3 cup (70 g) packed light brown sugar
  • 1 tsp (5 ml) ground cinnamon
  • 1⁄4 tsp (1 ml) ground allspice
  • 1⁄4 tsp (1 ml) ground nutmeg
  • 1 recipe Double Crust Fruit Pie Dough (recipe follows)
  • 2 tbsp (12 g) rolled oats
  • 2 tbsp (30 g) unsalted butter
  • 1 egg mixed with 2 tbsp (30 ml) water, for brushing
  • sugar and cinnamon, for sprinkling
  • subheading: Double crust pie dough:
  • 2 1⁄2 cups (375 g) all-purpose flour
  • 1 Tbsp (14ml) sugar
  • 1 tsp (5ml) salt
  • 3 Tbsp (44ml) vegetable oil
  • 1 cup (225g) cool unsalted butter, cut into pieces (does not have to be ice cold)
  • 1⁄4 cup (60 ml) cool water
  • 2 tsp (10 ml) white vinegar or lemon juice
