  • 1 ½ pounds of chicken - ground (99% fat-free)

  • 1 15 oz can of black beans
  • 1 15 oz can of corn
  • 4 roma tomatoes, chopped
  • 1 bunch of scallions, chopped
  • 6 tablespoons or more of Fat Free Salsa or Pico De Gallo
  • 12 tablespoons of Fat Free Cheddar Cheese
  • 3 cups of Instant Rice - cooked
  • 6 dollops or tablespoons of Greek Yogurt ( optional)
