Kimchi Fried Rice with Spam

Ingredients
  • 2 cups of rice (preferably day old)
  • 3 to 4 cups kimchi (squeeze out juice and dice)
  • ½ can of spam (diced)
  • ½ medium yellow onion (diced)
  • 1 tbsp cooking oil
  • 2 tbsp seasoning soy sauce (I use golden mountain)
  • 1 tsp granulated garlic
  • 2 tbsp red chili paste with vinegar
  • 2 tsp sesame oil
  • ½ tsp white pepper
  • 2 to 3 tbsp kimchi juice
  • Green onions (chopped)
Steps
  1. On medium high heat, saute yellow onions and sprinkle granulated garlic. Cook until onion is translucent. Then add kimchi and sprinkle granulated garlic. Stir until kimchi is warm them add spam. Stir until warm as well.
  2. Turn down heat to low then add rice, soy sauce, red chili paste, sesame oil, white pepper, and kimchi juice. Turn heat back up to high then stir rice and ingredients until they are all mix evenly. The kimchi juice will make the rice wet so stir for a few minutes. Rice doesn't have to be completely dry.
  3. Once done, turn off heat and add chopped green onions. Save some for garnishing.
Notes
  • Measurements are estimates since I usually eyeball when I'm cooking.
