Salisbury Steak Meatballs (Low Carb & Gluten Free)
Ingredients

  • 1 pound ground beef, lean
  • ⅓ cup almond meal for gluten free/low carb version (or bread crumbs if preferred)
  • ⅓ cup chopped parsley
  • 1 small onion finely chopped
  • 1 egg
  • 5 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • subheading: FOR THE MUSHROOM GRAVY:
  • 1 tablespoon olive oil
  • 16 ounces mushrooms, sliced
  • 2 tablespoons butter
  • 1 cup yellow onion, sliced ¼ inch thick
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons fresh chopped parsley (more for garnish)
  • 3 tablespoons Worcestershire sauce or balsamic vinegar (Lea & Perrins Worcestershire Sauce for gluten free)
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon salt and pepper
