Double Filling Lemon Bars
I Added a Few Tablespoons of Corn Starch and 1/2C Less Sugar to Increase Tartness. and Some Vanilla Beans. I Own a Home Based Bakery and Sold 45 Orders of These in Two Days. Love This Recipe
Ingredients
  • subheading: For crust:
  • 2 cups flour
  • 1 cup butter
  • ½ cup powdered sugar
  • 1 tablespoon vanilla bean paste or extract
  •  
  • subheading: For Filling:
  • 6 to 8 eggs
  • 5 to 7 tablespoons lemon juice
  • 1 ½ cups sugar
  • 4 tablespoons flour
  • ½ teaspoon salt
  • 1 tablespoon vanilla bean paste
  • 6 tablespoons of corn starch
Steps
  1. To make crust: Cream butter and sugar and press into ungreased 9 x 12 pan. Bake 15 minutes at °350F
  2. To make bars: Beat eggs and add lemon juice and rest of ingredients. Pour on baked crust. Bake 45 to 55 minutes at °300. Sprinkle with powdered sugar while still warm.
