  • 14oz package medium-firm tofu, gently pressed
  • 1 stalk celery, small dice
  • 2 green onions, finely chopped
  • 1 Tbsp fresh parsley, finely chopped or 1 tsp dried
  • 1 Tbsp fresh dill, finely chopped or 1½ tsp dried
  • ½ tsp freshly cracked black pepper
  • ¼ tsp paprika
  • pinch of cayenne, to taste
