Dr. Tseng's Magic Healing Soup
Ingredients
  • 1 inch piece of ginger
  • 3 garlic cloves
  • 3 to 4 scallions with root end
  • 1 tsp miso paste
  • 2 tsp ground withe pepper
  • ½ tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 2 TBL soy sauce
  • 2 tsp dulse flakes or other seaweed
  • 3 to 4 cups water
  • 1 cup cooked rice OR 6 to 8 oz uncooked rice noodles
  • 2 to 3 cups chopped veggies of your choice (for example: mushrooms, snow peas, green beans, carrots, bok choy, broccoli, kale, bell pepper, zucchini)
