Fiesta Mango Quinoa Salad
Ingredients
  • 1 cup dry quinoa
  • 2 cups vegetable broth
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 cup frozen/thawed corn (I like Trader Joe's fire-roasted frozen corn)
  • 1 medium red bell pepper, seeded and chopped
  • 1 ripe mango, peeled and chopped
  • ½ cup red onion, finely chopped
  • ⅓ cup cilantro leaves, roughly chopped
  • 1 jalapeño pepper, seeds and ribs removed, finely chopped
  • Optional toppings: pumpkin seeds, chunks of avocado, extra cilantro
  • subheading: Chili-Lime Dressing:
  • 3 Tbsp. extra-virgin olive oil
  • 2 Tbsp. fresh lime juice
  • 2 tsp. honey
  • 2 tsp. chili powder
  • ½ tsp. ground cumin
  • ¾ tsp. kosher salt
