Pioneer Woman Tater Breakfast Casserole
Ingredients
  • 1 pound breakfast sausage
  • 1 medium onion, finely diced
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup half & half
  • ¼ tsp seasoned salt
  • ¼ tsp cayenne pepper
  • 1 red bell pepper, seeded and finely diced
  • 1 green bell pepper, seeded and finely diced
  • 2 cups grated cheddar cheese
  • 1 cup grated pepper jack cheese
  • Kosher salt and black pepper
  • Butter, for baking dish
  • 16 oz bag of frozen tater tots
Steps
  1. Preheat oven to 350*F
  2. In a large skillet, cook the sausage and onion over medium-high heat until browned and cooked through, 8 to 10 mins
  3. In a large bowl, whisk the eggs, milk, half & half, seasoned salt, and cayenne pepper
  4. Add the bell peppers, half of both cheeses, and a pinch each of salt and pepper. Stir and set aside
  5. Butter a 9x13 baking dish and line it with frozen tots
  6. Sprinkle the sausage mixture over the tots
  7. Followed by the egg-bell pepper-cheese mixture spread evenly over the top
  8. Top with the rest of the cheese (can cover a refrigerate over night at this point)
  9. Bake, covered, for 25 mins, then remove the foil
  10. Continue to bake until the cheese is browned and bubbling and the casserole is cooked through, another 25 to 30 mins
  11. Dig in!!!
