Lentils with Smoked Sausage and Carrots
Ingredients
  • 2 tablespoons cooking oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, halved lengthwise and cut crosswise into ¾-inch pieces
  • 1 pound lentils (about 2 ⅓ cups)
  • 1 quart water
  • 1 ¼ teaspoons salt
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 pound smoked sausage, cut diagonally into ¾-inch slices
  • 3 tablespoons chopped fresh parsley
