Ingredients
  • 4 chicken cutlets, or 2 large chicken breasts, cut in half
  • 1 14 oz jar of artichoke hearts, drained and chopped (can use marinated) remove tough leaves
  • ½ cup mayo
  • ½ cup sour cream
  • ¾ cup grated or shredded parmesan cheese
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • 4 cups baby spinach
  • 1 tbsp olive oil
