Ingredients

  • 4 veal shanks (also sold as shins), cross cut with bone in, about 1 ½ inches thick

  • 2 Tbsp flat-leaf parsley, chopped
  • 1 28-oz can whole plum tomatoes (preferably San Marzano), drained and coarsely chopped
  • ½ cup chicken broth
  • 1 bay leaf
  • Salt and pepper, to taste
  • subheading: For the gremolata:
  • Zest of two lemons, grated
  • ½ bunch flat-leaf parsley, stems removed and finely chopped
  • 3 cloves garlic, crushed or finely minced
