Roasted Chicken Ramen Recipe by Michael Symon
Ingredients

  • 5 pounds chicken wings
  • 2 tablespoons canola oil
  • 2 medium yellow onions (halved and peeled)
  • 1 head garlic (cut through the equator)
  • 3 inch piece of fresh ginger (sliced thickly on the bias)
  • 1 bunch scallions (whites and greens separated)
  • ½ pound shiitake mushrooms (ends trimmed)
  • 1 (12-inch sheet) kombu
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 10 ounces ramen noodles (cooked according to package directions)
  • 1 cup bean sprouts
  • 4 soft boiled eggs (cut in half)
  • 1 lime (cut into wedges)
  • ½ cup kimchi
  • 1 to 2 jalapenos (thinly sliced into rings)
