Strawberry Citrus Meringue Pie
Ingredients
  • 1½ C graham cracker crumbs*
  • ¼ C brown sugar
  • 6 T unsalted butter, melted
  • Unsalted butter or baking spray, for greasing
  • note: You'll need about 10 graham cracker sheets to make 1½ cups of crumbs.

  • ¾ C granulated sugar
  • 5 T cornstarch
  • ½ C strawberry juice
  • 2 T lemon juice, freshly squeezed
  • 2 T orange juice, freshly squeezed
  • 1 T lemon zest
  • 1 tsp vanilla extract
  • ¼ tsp salt

  • 5 egg whites, room temperature
  • 6 tablespoons powdered sugar
  • ¼ tsp cream of tartar
