Gluten-Free Apple Pie
Ingredients
  • Crust
  • 2 ½ cups (300g) King Arthur Gluten-Free Measure for Measure Flour
  • 1 ¼ teaspoons salt*
  • ¼ cup (46g) vegetable shortening
  • 10 tablespoons (142g) unsalted butter, cold
  • 6 to 10 tablespoons (85g to 142g) ice water
  • note: Reduce the salt to 1 teaspoon if you use salted butter.
  • Filling
  • 8 cups (964g) apples, peeled, cored and sliced (from about 3 ¼ pounds whole apples)
  • 2 tablespoons (28g) lemon juice
  • ¾ cup (149g) granulated sugar
  • 2 tablespoons (14g) King Arthur Gluten-Free Measure for Measure Flour
  • 2 tablespoons (14g) cornstarch
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon*
  • ¼ teaspoon nutmeg*
  • ¼ teaspoon allspice*
  • ¼ cup (85g) boiled cider or ¼ cup (70g) apple juice concentrate
  • 2 teaspoons King Arthur Pure Vanilla Extract, optional
  • 2 tablespoons butter, diced in small pieces
  • note: Substitute 1 ½ teaspoons Apple Pie Spice, if desired.
