Maple Roasted Vegetables
Ingredients
  • ⅓ cp Canola Oil
  • ⅓ cp Maple Syrup
  • 1 ea Red Pepper, cut into large cubes
  • 1 ea Green Pepper, cut into large cubes
  • ½ hd Cauliflower, sliced 1 ½-inch cubes
  • 1 ea Sweet Potato, cut into 1 ½-inch cubes
  • 1 ea Acorn Squash, peeled and cut into 1 ½-inch cubes
  • 4 ea Parsnips, peeled and cut lengthwise
  • 4 ea Carrots, peeled and cut lengthwise
  • 1 hd Garlic, peeled and spearated into cloves
  • 1 lg Red Onion, cut into eighths
  • 1 tsp Salt & Pepper
  • 1 tbsp Dried Basil
