Cauliflower, Leek Mac + Cheese ‍
Ingredients
  • 2 large leeks, halved and thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 500 ml (2 cups/18 fl oz) hot water from the kettle
  • 1 cauliflower, cut into florets
  • 250 g (8 oz) short pasta (I used gluten free)
  • 250 g (8 oz) ricotta
  • 60 g (2 oz) Parmesan cheese, grated
  • handful parsley, chopped
  • handful of breadcrumbs
