Ingredients
  • 3 lb. chicken thighs, breast halves and/or drumsticks
  • Salt and freshly ground pepper, to taste

  • 3 roasted red bell peppers, cut into thick strips (see related tip at left)
  • 4 large garlic cloves, minced
  • ¼ tsp. saffron threads, crushed
  • 2 cups long-grain white rice
  • 3 cups chicken broth
  • 2 Tbs. chopped fresh oregano
  • 1 can (14 ½ oz.) diced tomatoes with juices
