Gluten Free Red Velvet Cookies & Ice Cream Sandwiches
These fun and festive gluten free red velvet cookies and ice cream sandwiches make patriot holidays yummy, but don't wait for July 4th to make them!
Ingredients
  • subheading: Red Velvet Cookies:
  • 4 Tbs. (2 oz.) butter or non-dairy alternative (e.g. Earth Balance® Buttery Sticks)
  • ⅔ cup granulated cane sugar
  • 1 Tbs. vegan mayo (or regular mayonnaise)
  • 1 Tbs. vegan cream cheese (or dairy cream cheese)
  • 2 Tbs. milk, dairy or non-dairy (+ more if needed)
  • 1 tsp. pure vanilla extract
  • Red food coloring, as needed
  • 1 ¼ cups gfJules® All Purpose Gluten Free Flour, plus more for rolling
  • 1 ½ tsp. unsweetened cocoa powder (either Dutched or non-Dutched)
  • ½ tsp. baking soda
  • ¼ tsp. sea salt
  • subheading: Cream Cheese Icing for Sandwiches:
  • 2 cups confectioner’s sugar, sifted
  • ½ cup cream cheese (or vegan cream cheese like Go Veggie or lactose free cream cheese - Green Valley Organics®)
  • ½ tsp. pure vanilla extract
  • subheading: Ice Cream Sandwiches:
  • 1.5 quarts ice cream or non-dairy alternative (I like So Delicious®)
