Harvest Minestrone W/ Kale
Ingredients
  • 1 onion - diced
  • 2 celery stalks - diced
  • 3 carrots - diced
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic - minced
  • 2 cups fresh zucchini - diced
  • 2 cups green beans-cut 1 inch
  • 1 bell pepper - medium diced
  • 1 28-ounce can crushed tomatoes
  • 2 28-ounce cans of water (refill your empty can, twice)
  • 1 15-ounce can rinsed cannellini beans
  • 1 15-ounce can rinsed chickpeas
  • 1 cup quinoa
  • 2 cups kale - stems removed
  • 1 teaspoon turmeric (or to taste)
  • Pinch of red pepper flakes
  • Sea Salt and pepper to taste
  • Garnish with parmesan to taste
  • Garnish with fresh basil or finely chopped rosemary
