Thai shrimp and vegetable soup

Ingredients
  • Olive oil
  • 1 onion chopped
  • Salt and pepper
  • 2 tsp garam marsala
  • 1 tbsp curry paste
  • 1 tsp sriracha
  • 1 tbsp ginger, peeled and chopped
  • 2 garlic cloves, roughly chopped
  • 1 can coconut milk
  • ¼ cup tomato paste
  • 1 tbsp honey
  • 1 lime, zest and juice
  • 1 tsp soy sauce
  • 1 tbsp fish sauce
  • 8 cups chicken stock
  • 1 cup brocoli
  • 8 baby bok choys
  • 1 lb raw shrimp
  • 3 ½ oz rice vermicelli
  • Fresh cilantro, chopped
  • 2 green onions, sliced
Steps
  1. Heat oil and cook the onion. Add salt and pepper
  2. Add the garam marsala, curry paste, sriracha, ginger and garlic, cook for 3 more minutes
  3. Add the coconut milk
  4. Purée until smooth
  5. Add the tomato paste, honey, lime zest and juice, soy sauce, fish sauce, chicken stock. Bring to a boil and reduce heat
  6. Add the remaining ingredients and simmer.
