Ingredients
- Olive oil
- 1 onion chopped
- Salt and pepper
- 2 tsp garam marsala
- 1 tbsp curry paste
- 1 tsp sriracha
- 1 tbsp ginger, peeled and chopped
- 2 garlic cloves, roughly chopped
- 1 can coconut milk
- ¼ cup tomato paste
- 1 tbsp honey
- 1 lime, zest and juice
- 1 tsp soy sauce
- 1 tbsp fish sauce
- 8 cups chicken stock
- 1 cup brocoli
- 8 baby bok choys
- 1 lb raw shrimp
- 3 ½ oz rice vermicelli
- Fresh cilantro, chopped
- 2 green onions, sliced
Steps
- Heat oil and cook the onion. Add salt and pepper
- Add the garam marsala, curry paste, sriracha, ginger and garlic, cook for 3 more minutes
- Add the coconut milk
- Purée until smooth
- Add the tomato paste, honey, lime zest and juice, soy sauce, fish sauce, chicken stock. Bring to a boil and reduce heat
- Add the remaining ingredients and simmer.
