Flank Steak Tacos with Cilantro Lime Marinade
Ingredients
  • subheading: For the marinade:
  • 1 {2 lb} Flank Steak or Skirt Steak
  • ⅓ cup Olive Oil
  • Juice of 1 Lime
  • 1 Garlic Clove, smashed
  • A handful of Cilantro
  • 2 teaspoons of Honey
  • ½ teaspoon of Cumin
  • ½ teaspoon of Ancho-Chili Pepper
  • ½ teaspoon Red Pepper Flakes
  • Kosher Salt and Fresh Black Pepper, to taste
  • subheading: For the Steak Tacos:
  • 2 lbs. prepared Cilantro-Lime Marinated Flank Steak, sliced thin
  • 10 to 12 Soft Flour Tortillas
  • Iceberg Lettuce, shredded or sliced
  • Pico de Gallo {see my recipes}
  • Monterey Jack Cheese, freshly grated
