Carrot-Ginger Dressing
Ingredients
  • ⅓ cup avocado oil*
  • ¼ cup rice vinegar
  • ¼ cup reduced-sodium soy sauce
  • 3 medium carrots (or 15 baby carrots), roughly chopped
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons peeled and roughly chopped fresh ginger root (or 1 teaspoon ginger powder)
  • 2 cloves garlic, peeled and roughly chopped (or ¼ teaspoon garlic powder)
  • ¼ teaspoon salt, or more to taste
  • ¼ teaspoon black pepper, or more to taste
  •  
  • note: you can use another neutral-tasting oil like canola or grapeseed, or even light olive oil.
