Pumpkin spice muffins
Ingredients
  • 1 cup quick cooking oats
  • ¾ cup sunsweetened almond milk
  • 1 cup whole wheat flour
  • ½ tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 2½ T pumpkin spice blend
  • 2 lg eggs
  • ¼ cup maple syrup
  • 1 cup canned pumpkin
  • ⅓ cup raisins
  • ½ cup walnuts, pulled or chopped
Steps
  1. Preheat oven to 375.
  2. Mix all ingredients in a lg bowl, then spoon into a lined muffin tin.
  3. Bake until inserted toothpick comes out dry, 15 to 20 minutes.
