Ingredients
  • 2 ½ cups (1 lb) cooked cauliflower (I used frozen. Can cook in microwave until tender.)
  • 1 cup sour cream (low-fat or full-fat)
  • ¾ cup shredded cheddar cheese ~ divided (full fat works best - I used sharp cheddar cheese.)
  • 3 green onions, finely chopped ~ divided
  • 3 to 6 sliced cooked, crumbled bacon ~ divided (I used 6 this time.)
  • salt and pepper
