Cheater Lasagna
For a quick week night meal, when you don’t want it to taste quick!

Ingredients
  • 1 lb. Ground beef or 14 oz. Italian sausage
  • 1 jar Bertolli organic pasta sauce ( or whatever brand you prefer)
  • 2 cups cottage cheese or ricotta
  • 3 eggs
  • 1 c. Parmesan cheese
  • 1 c. Italian cheese blend
  • Sea salt
  • Pepper
  • Italian seasoning
  • Box of oven ready lasagna noodles ( I prefer gluten free)
Steps
  1. Brown meat In skillet.
  2. Drain juices.
  3. Add jar sauce.
  4. Let simmer on low while you complete next step.
  5. Mix cottage cheese, eggs, ¾ of each of the cheeses, salt , pepper and Italian to liking.
  6. In a 9x13 oven safe dish layer your lasagna.
  7. Thin layer of meat sauce.
  8. 4 noodles spread across.
  9. Thin layer of meat sauce and cheese sauce.
  10. 4 noodle again spread.
  11. Spread the rest of the meat sauce and cheese sauce.
  12. Top with remaining cheeses and a sprinkle of Italian seasoning.
  13. Bake at 375 for 45 minutes.
Notes
  • Careful with salt. Store bought sauce tends to have more than enough.
