Keto Chicken and Cauliflower Rice Casserole

Ingredients
  • 300g rotisserie chicken shredded or cut up(2 ½ cups)
  • 12 oz bag cauliflower rice steamed
  • 28 g Quest Multipurpose (1 scoop) (can skip if no powder)
  • ½ cup half and half
  • 4 oz reduced fat cream cheese softened
  • ½ tsp minced garlic
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ cup chicken stock
  • 60g shredded cheese (1cup)  (I use mexican blend)
Steps
  1. 1. Spray a 2 QT casserole dish with cooking spray and set aside. Preheat oven to 400
  2. 2. Steam cauliflower according to packaging directions, let set a few minutes til cooled.
  3. 3.  While cauliflower is cooking shred or chop up rotisserie chicken if not already done.
  4. 4. In a large bowl combine chicken stock with protein powder if using. Stir in half and half, cream cheese, seasonings, chicken and cauliflower rice. Pour into the baking dish and top with shredded cheddar cheese.
  5. 5. Bake 20 minutes uncovered. Cool for about 5 minutes.
