Pumpkin Bread
2 loaves, Prep 30 min, Bake 1hr 20 min
Ingredients
  • 3 c Sugar
  • 1 c Olive Oil/Salad Oil
  • 4 Eggs - beaten
  • 1 16 oz can Pumpkin
  • 3.5 c Flour
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Nutmeg
  • 1 tsp Allspice
  • 1 tsp Cinnamon
  • ½ tsp Cloves
  • ⅔ c Water
Steps
  1. Pre-heat oven to 350°
  2. Mix all dry ingredients together (except the sugar)
  3. Gradually cream sugar, oil, eggs and pumpkin together
  4. Gradually add in dry mixture, alternating with the water
  5. Spray 2 loaf pans with Pam and cover with flour
  6. Poor batter evenly in to the pans and put into the oven
  7. Bake for 1 hour, rotating pans half way through to bake evenly
  8. Continue baking until toothpick comes out clean (usually about 10 to 20 minutes)
  9. ** Pumpkin Muffins - Make batter and pour into muffin pans. Bake @ 340° for ~ 25 mins
  10. ** Mini Loaves (3 med, 8 small) - Make batter and pour into mini loaf pans. Bake @ 340° for ~ 45 mins
  11. ** Apple Bread - Replace Pumpkin and water with 1 can Apple Pie Filler
  12. * To freeze, wrap with plastic wrap and foil
