Ingredients
- 18 eggs
- 1½ lb breakfast sausage
- 12 English muffins
- 2 lb mushrooms
- 1 bunch spinach
- Sliced American cheese
- Salt
- Pepper
- Olive oil
- Butter
Steps
- Preheat to 350°F
- Whisk eggs with 1⅛ tsp salt to a yellow consistency. Set aside for 15 minutes.
- Pan-fry mushrooms in olive oil
- Wash & chop spinach and wilt as mushrooms finish frying
- Butter muffin tins (even if non-stick). Form sausage into patties that fit the bottom of the tin.
- Combine eggs, mushrooms, spinach and seasonings to taste. Evenly divide between the muffin tins.
- Bake until medium set. (12 to 15 minutes)
- Cool on a wire rack.
