Breakfast Muffins

Ingredients
  • 18 eggs
  • 1½ lb breakfast sausage
  • 12 English muffins
  • 2 lb mushrooms
  • 1 bunch spinach
  • Sliced American cheese
  • Salt
  • Pepper
  • Olive oil
  • Butter
Steps
  1. Preheat to 350°F
  2. Whisk eggs with 1⅛ tsp salt to a yellow consistency. Set aside for 15 minutes.
  3. Pan-fry mushrooms in olive oil
  4. Wash & chop spinach and wilt as mushrooms finish frying
  5. Butter muffin tins (even if non-stick). Form sausage into patties that fit the bottom of the tin.
  6. Combine eggs, mushrooms, spinach and seasonings to taste. Evenly divide between the muffin tins.
  7. Bake until medium set. (12 to 15 minutes)
  8. Cool on a wire rack.

  13. Individually wrap with wax paper and tightly with plastic.
  14. Label & freeze
