Apple and Rhubarb with Oat Clusters

Ingredients
  • subheading: Apple and Rhubarb Filling:
  • 3 large sweet apples, cut into pieces
  • ¼ cup raisins/sultanas
  • 1 bunch (about 5 stalks) rhubarb, green leaves removed, stalks cut into 1-inch pieces
  • 1 cinnamon stick
  • 3 whole cloves
  • ¾ cup apple sauce (unsweetened)

  • subheading: Oat Clusters:
  • 2 cups rolled oats
  • ½ cup applesauce (unsweetened)
  • ⅓ tsp cinnamon
Steps
  1. 1. Preheat oven to 350°.  Prepare cluster mix by combining rolled oats, applesauce, and cinnamon together and mix well. Spread cluster mixture on a lined baking tray and bake in the oven for 20 minutes or until dry, golden, and crispy (stirring occasionally).
  2. 2. In a saucepan, combine apple, raisins/sultanas, Rhubarb, cinnamon stick, and cloves. Add ½ cup of water and bring to a boil on the stove top. Once boiling, turn heat down and simmer, stirring occasionally for 10 minutes or until fruit is soft. Stir through apple sauce and add additional water, if necessary.
  3. 3. To serve, remove cinnamon stick from Apple and rhubarb mix, and pour into a serving dish. Top with cluster mix and serve immediately.
