Thai Pork & Gravy Noodles (Rad Naa)

Ingredients
  • 3 tbsp vegetable oil
  • 300g fresh rice noodles*
  • 1 tsp dark soy sauce
  • 2 garlic cloves, finely chopped
  • 100g (3.5 oz) gai lan (Chinese broccoli) or any Asian greens you prefer, sliced
  • 3 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 200g pork fillet, thinly sliced
  • 2 tbsp cornflour mixed with 2 tbsp water
  • ¼ tsp ground white pepper
  • chilli power to serve
  • subheading: Chilli Vinegar:
  • 1 long red chilli, sliced
  • ¼ cup white vinegar
