Sheet-Pan Chicken Quesadillas
Ingredients
  • 6 slices bacon, optional
  • 4 scallions, thinly sliced, white and green parts separated
  • 1 large red bell pepper, diced
  • 1 large jalapeño pepper, seeded and diced
  • 6 cloves garlic, pressed or minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • fine sea salt, to taste
  • freshly cracked black pepper, to taste
  • 1 pound chicken, cooked, shredded or diced
  • 2 (15-ounce) cans pinto or black beans, rinsed and drained
  •  
  • 1 cup sour cream
  • ¼ cup fresh cilantro, finely chopped
  • butter, to taste, melted, for greasing the sheet pan and brushing the quesadillas
  • 16 (10-inch) flour tortillas or 24 (8-inch) flour tortillas
  • 4 cups Mexican blend or pepper jack cheese, shredded
  • pico de gallo, to taste, for serving
